Introducing Portugal's most popular everyday-everywhere soup. Taste it with your eyes closed, and it's almost as good as being there :-)
Ingredients: 4-5 potatoes, roughly chopped | 3 tablespoons olive oil | 2-3 chorizo or linguica sausages, cut into 6mm coins | 1 onion, roughly chopped | 2-3 cloves of garlic, sliced | MGK organic chicken broth, 600-900ml | 1 small bunch of green leafy vegetable e.g. kale or spinach, destemmed and thinly sliced | Salt and Pepper to taste
In a deep soup pot, heat olive oil and fry the pieces of chorizo until brown on all sides, then remove the fried chorizo onto a separate plate, leaving the red chorizo oil in the pot.
Use the same oil and pot to fry onions and garlic until soft, then add the potatoes and 1 tsp salt, followed by the MGK chicken broth, using approx 200ml per person. It's OK to dilute with water. Simmer for 15 mins until potatoes are soft.
Turn off the heat. Allow the soup to cool a bit for 10 mins and add back approx half the fried chorizo into the soup. Use a hand blender to blend all the ingredients in the pot until everything is smooth (be careful, soup is still hot).
Return the pot to the stove and bring it to a low boil, then stir in the sliced vegetable. Add salt and pepper to taste. Serve.
Ladle out the soup into bowls or deep plates, and place a few chorizo pieces in the center (Traditionally only 1 piece of chorizo is placed into each serving, but who's watching?). As they say in Portugal "Bom Appetite"!
