We know what it's like to be working from home and having to make meals for yourself and your loved ones; and having young children adds another layer of complexity. Time and energy are scarce resources while convenience and quality are often opposites, until you realize you can have both in this authentic chicken soup.
Ingredients: Minced chicken, approx 70g per person | MGK organic chicken broth, approx 200-300ml per person | Celery and/or carrots, 1 stalk/stick cut into small pieces | Chinese parsley, 1 small bunch, roughly chopped | Fried shallots or garlic | Salt and pepper to taste.
Heat the chicken broth and bring to a boil then add the minced chicken, celery/carrots. Use a slotted spoon or fork to break up the minced chicken and prevent clumps. Maintain a gentle boil for 10 mins.
Add salt and pepper to taste, followed by the chopped Chinese parsley and fried shallots or garlic.
Divide into bowls, serve and enjoy!
