This is Spain's answer to Chinese congee, Malay bubur and Japanese zosui. In one word: Delicioso!
We adapted this Arroz Caldoso recipe by using MGK wild fish and vegetable broths (chicken is good too), and adding live clams and fresh chorizo. Slit the sausages open, then sear and break up into small pieces when you start cooking. 5 mins before you serve, add the live clams into the soupy rice 5, followed by the prawns. The rest of the recipe is straightforward. Enjoy!
